Onze klassieke Birthday Cake, geïnspireerd op de supermarktvariant waar we mee opgroeiden — nu glutenvrij! Drie lagen van met regenboogvlekjes bestrooide, glutenvrije vanille B'Day-cake, gelaagd met romig B'Day-glazuur en knapperige glutenvrije B'Day-kruimels. Smaakt naar vroeger (nou ja… zonder de gluten).
I was a little worried a gluten-free cake would taste like cardboard, but this one's fluffy vanilla layers with rainbow flecks are spot-on, and the creamy frosting between the three tiers is exactly the nostalgic birthday taste I wanted.
The frosting stayed perfectly creamy after two days in the fridge, and the rainbow flecks are subtle enough that it still feels like a proper birthday cake. Even my non-gluten-free dad went back for a second slice.
The rainbow-flecked layers are a total nostalgia trip, and the creamy frosting is just sweet enough without being cloying. I froze half and it thawed perfectly for a second celebration, which was a pleasant surprise for a gluten-free cake.
