Our classic Birthday Cake, inspired by the supermarket stuff we grew up with — now made gluten-free! Three tiers of rainbow-flecked, gluten-free vanilla B'Day cake layered with creamy B'Day frosting and crunchy gluten-free B'Day crumbs. Tastes like childhood (y’know… without the gluten).
The rainbow-flecked layers are a total nostalgia trip, and the creamy frosting is just sweet enough without being cloying. I froze half and it thawed perfectly for a second celebration, which was a pleasant surprise for a gluten-free cake.
It’s tasty enough, and the gluten-free vanilla flakes are a nice touch, but the three tiers felt a bit dry by the second day even in the fridge.
