Vår klassiska Birthday Cake, inspirerad av det där från snabbköpet som vi växte upp med – nu glutenfri! Tre lager av regnbågsströsslad, glutenfri vanilj-B'Day-kaka varvad med krämig B'Day-frosting och krispiga glutenfria B'Day-strössel. Smakar som barndomen (du vet… utan glutenet).
I was a little worried a gluten-free cake would taste like cardboard, but this one's fluffy vanilla layers with rainbow flecks are spot-on, and the creamy frosting between the three tiers is exactly the nostalgic birthday taste I wanted.
The frosting stayed perfectly creamy after two days in the fridge, and the rainbow flecks are subtle enough that it still feels like a proper birthday cake. Even my non-gluten-free dad went back for a second slice.
The rainbow-flecked layers are a total nostalgia trip, and the creamy frosting is just sweet enough without being cloying. I froze half and it thawed perfectly for a second celebration, which was a pleasant surprise for a gluten-free cake.
